First three letters of "Jesus" in Greek are iota-eta-sigma.
The Greek capital letter version of these are a popular Christian inscription when arranged like a monogram with the letters on top of each other - IHS.
I suspect this is what you have seen (it's popular in Catholic cemeteries especially).
The Jesuits (the Society of Jesus) also use it to mean:
"Iesus Hominum Salvator" or "Jesus, Saviour of Mankind."
