The surname Pál (Paul) is quite a common one in Hungary. In the case of your family (since the given names are German), I would theorize that they gave the Hungarian name the German spelling of Paal.
My own area of research is Bukovina, where there are cases of the opposite occurring; namely German families who became "Magyarized" and changed "Gaschler" to "Kásler", and so forth.
Since your ancestors are apparantly "Transylvania Saxons", have you looked at that website? Each of the former German villages has a village association, and frequently, a "heimatbuch" with much genealogical information.
Also, you can rent the microfilmed church records of Peschendorf (1713-1931) through your local LDS Family History Center.
