BIG CHANGE - I now think George is likely the son of Alfred, not Sylvester.

There is no 1890 census so we can't find George as a little toddler with parents...but in the 1900 census George is not with the Sylvester-Sarah Callais family. So I searched some more. I now think he's the son of Alfred Victor Callais (the brother of Sylvester). The mother's maiden name on George's death certificate is "Christop" - which fits the name of Alfred's wife.
Alfred Victor Callais son of John Baptist Calais and Julia Cheveron Birth 27 Nov 1855 Death 26 Jan 1920 married Victorene Christoffe Birth 09 Apr 1864 Death 29 Sep 1894 in St. Clair county, Illinois
