You might check records in Kinney Co, TX.Land and probate, plus guardianship for minor children.Yes, even if the mother was alive, the court would appoint a guardian.Guardian didnot take physical custody of children, just reported back to the court if any of the estate was sold etc.
Since he is listed as a carpenter, he may have lived in town and not owned land.Then look for him on poll tax records, he might have owned a horse or mule.
From age of William, you might keep in mind he could have had a previous marriage.I would look for him on the 1860 census.Or, he may have been in the Civil War, too.
Now, depending on how desperate you are, you could go through all the Parish/Parrish families on the 1850 census for KY.Look for one with son named William, or William J., about 16 years old.
