I am from the island of Crete (South Greece), my grand-grandfather was from Andros an Island in North Aegean Sea (One village there is full of Adamis). In 1819 he went to South France with his fishing boats in order to buy guns and return to fight against the Ottoman Empire in Aegean Sea. I think that his name was George. Regarding now the name origin, I heard once from my father that the Adamis surname probably comes from Italy, from somebody called "Adamius". Note that I am not sure whether or not that's correct story. Another possible explanation is that Adamis is a Greek name as long as the ancient word Adamantas means diamond. So probably the person first called Adamis was very beautiful. There are roughly speaking 400 Adamis in Greece.
