Guillot was the proper spelling. However, for a period (1750-1850) where schooling was nil on the Gaspé coast and in New-Brunswick, priests and officials rlied on pronunciation to write the names. Guillot became Diot, Dyot, Diotte, Dyotte easily. One family in particular chose, for unknown reason to name themselves Noël in honor of Noël Guillot m. 1) Fillion, m. 2) Anne Beaudry. This family was living in Grande-Rivière. But the name Noël did not stick.
Correction: Louis Guillot did not marry Anne Beaudry.
