Hi. I'm not related to this family. This is probably Alcide & Amanda in 1895:https://familysearch.org/pal:/MM9.1.1/MQDB-X6Z

So, it appears that Amanda was born closer to 1870 than 1863.When I looked for an Amanda Doucette b. 1871, I find her living in Belle Prairie, Minn in 1875, daughter of Josepy & Julia. Her sister, Rosa, is also there:
Minnesota, Territorial and State Census, 1849-1905 about Amanda Doucette Name: Amanda Doucette Census Date: 1 May 1875 County: Morrison Locality: Belle Prairie Birth Location: Minnesota Gender: Female Estimated Birth Year: abt 1872 Race: White Father's Birth Location: Canada Mother's Birth Location: Canada Roll: MNSC_11 Joseph Doucette39b. 1836 Canada, parents b. Canada Julia Doucette38b. 1837 Canada, same David Doucette12b. 1863 Minn Hermine Doucette9b. 1866 Minn Annie Doucette8b. 1867 Minn Chas Doucette5b. 1870 Minn Amanda Doucette3b. 1872 Minn ** Clara Doucette1b. 1874 Minn Rosanna Doucette1b. 1874 Minn **
I think the above is more likely to be Amanda's family. Besides, in the 1880 Census record which I believe is the one you are referring to, Amanda is actually a boy named Amedie, b. 1863 Canada.
According to a tree on Ancestry, Amanda's parents are Joseph Doucette & Julie Heroux who married 10 Jan 1861 in Belle Prairie.
Here is this family in 1885:
Minnesota, Territorial and State Census, 1849-1905 about Jos Doucette Name: Jos Doucette Census Date: 1 May 1885 County: Morrison Locality: Belle Prairie Birth Location: California [Canada] Gender: Male Estimated Birth Year: abt 1835 Race: White Roll: MNSC_33 Joseph Doucette50b. 1835 Canada Julie Doucet37b. 1848 Canada Harmine Doucet20b. 1865 Minn Chas Doucet16b. 1869 Minn Amanda Doucet14b. 1871 Minn ** Clara Doucet12b. 1873 Minn Rosanna Doucet12b. 1873 Minn **
By the 1895 Census, Joseph & Julia are living alone in Belle Prairie.
There is a notation in a family tree on Ancestry about Joseph Doucette "Upper Mississippi Valley (Book)Joseph Doucette was born in this districk of Three Rivers, Canada, on the 19th of July 1835.He came to the United States in 1853,and was employed for a time in Detroit, Michigan, and in the woods near Lake Superior, after which he came to CrowWing in a birch bark canoe, arriving there in 1856, and was afterward engaged in the lumber business.Mr. Doucet then moved to Otter Lake and opened a hotel, which he carried on for a few years, and in 1862, came to Belle Prairie. After going from here to Crow Wing, Fort Garry, and Little Falls, he returned to this township, and has since made it his home.He married Miss Julia Aroux. They have ten children, nine of whom are living."
