To answer your questions:
Yes, Gideon was married twice, to the women you named.His second wife Priscilla is my g-g-g-grandmother, and is buried in Union Cem. in Georgetown.Gideon was buried out on one of the farms where they lived, somewhere near Knowles or Gum Crossroads is my best guess.
I have never gotten back past Edmund to find out my earlier Hitchens ancestry, nor my Barker ancestry.Maybe someday...
I have a xerox of the 'Descendants of Edmund Hitchens' booklet.It has been of much use to me and, whenever I have found more details, I've handwritten them into my copy.Vernon wrote it in 1964.Sometime in the past couple years I located him and talked to him by phone, he still lives in downstate DelawareHe never did any more investigating beyond that booklet, so he couldn't tell me more.
In the census you list, the 14-year old Nancy is my g-g-grandmother.She married Henry Littleton, lived in the same area as her parents for a few years, then I think in the 1890's they moved to near Lewes, then moved to Pilot town Road in Lewes in 1916.
Regarding your Elihu and Levinia...am I not mistaken, or are they buried in that little cemetery in the farmers field at Hitchens Crossroads?
