They appear to be rather careless with the Catharine vs Catherine spelling. I agree that it is Catherine on her marriage license but Catharine on her tombstone. The spelling is Catharine on the bio of Martin S Mattingly from the history of Daviess County. George is not buried with his wife Catherine. Do you know where he is buried?
One daughter that is usually not mentioned is the oldest child, Elizabeth (b 26 Nov 1832). George and Catherine were married earlier that calendar year. Elizabeth was married to William Gates in 1849 which is why she doesn't show up in the 1850 census. Elizabeth attended Nazareth Academy where records list her parents as Mr. and Mrs George Mattingly of Nelson County.
