This bible relates to the family of Thomas Parnall who was born in Padstow in 1791 and married Ann Hicks in 1813. Thomas' brother, Edward Parnall, married my husband's gt-gt-gt-aunt, Jane Williams, in 1839, after the death of his first wife. I have Thomas and Ann's children as Edward (1815), Hannah (1817), Mary Ann (1819), and Philippa Hicks (1822), but I didn't know there was a Martha b 1813. The 'Uncle Courtney' referred to in the bible could have something to do with the fact that Philippa Hicks Parnall married Thomas Courtenay in 1842. Their daughter, Philippa Ann Courtenay, married William Henry Martyn in 1879. Edward Parnall (b 1815) married Jane Hawken of St Merryn in 1837 and their children were Thomas James (1837), Philippa Jane (1838 - that was the year of her birth and she actually died in Bristol in 1896), Edward ( b & d 1840), Louisa (1842) and Edward (1844).
Thomas Parnall drowned in October 1823 when his ship, the 'Retford', was lost with all hands off Lands End, and he is buried in Illogan churchyard, but with a memorial in St Petroc's churchyard, Padstow. He had a brother, Andrew, who was baptized in Padstow 19 Feb 1786, and this might be the person referred to in your bible as dying in Quebec, although there was another master mariner, Andrew Parnall who was lost at sea in Jan 1836 when his ship, the 'Frances Ann'of Padstow, sank after setting sail with grain for Liverpool.
