No, I do not believe the name is that common. A few years ago, I did some ressearch and found only 1,200 Schimmel's in the US.
In Germany, there are no Schimmel's left in either of the towns that my family originated from. It seems that they disappeared during WWII.
I visited the Schimmel Homestead in downtown Munchholtahusen and talked to the Granddaughter of the last Schimmel in the town. There had been 8 generations of Schimmels, one of which (Johann Georg Schimmel IV) was the Burgermeister (Mayor) of Munchholzhausen in the 1800's.
The family religion was Catholic until the Martin Luther movement in 1517. After 1517, the family became Lutheran. I visited the Church that the family attended. It is in good shape and is relatively small but very beautiful with ornate and colorful painted wood carvings.
