Just to recall some of the information I do have..
I found John B Scholey on the 1861 Census :

The children's names and initials (with the middle names as shown in brackets taken from his Last Will and Testament) so those details seem to be correct.
There is a record on IGI for a John Bailey Scholey christened at Ardingfleet, Yrks 1/2/1797 - father was John -mother was Sarah.
I have looked at the Marriage Allegations:
24 Jun 1828 John Bailey Scholey of St Mary, Lambeth, bachelor age 21 and
above. Marriage at St Paul Shadwell to Margaret Maria Fryer of St Paul,
Shadwell age 21 and above.
Probate records:
John Bailey Scholey formerly of Nightingale Lane, Clapham,Surrey but late of the West Highlands, Winchester Southampton died 25/9/1863 at West Highlands, Winchester Southampton proved by Margaret Maria Scholey, widow and John Fryer Scholey of 44 Eastcheap, City of London, Spice Merchant, the son of the executors.
There is an entry in the 1846 Post Office Directory which records John B Scholey spice merchant and wholesale coffee dealer at 33 St Mary at Hill (Eastcheap, London)
