"A Dictionary of The Cajun Language" by Rev. Msgr. Jules A Daigle may hold the key to the meaning of Zandou:
Note: Such words as Zoie (goose), Zoiseau (bird), Zoreille (ear), Zorteil (toe), etc., are obviously corruptions and are not cited as part of the Cajun language. The obvious origin of these errors is as follows: when children heard their elders talk about les ories, etc, they assumed that the Z sound belongs to the noun rather than the article or pronoun that precedes it." p. 164
Your word, Zandou, may be acorruption of "les andouille":
Andouille, n. f. Large intestine of a hog, a type of sausage made of the large intestine. p. 8
The sausage would have been smoked "dans sa maison de ferme". While answering a query placed on this board, I saw our earlier correspondence and could not resist writing.
