Kathleen I have been slowly pokin away at this family. I have also recently received more data from a descendant of J. Ensign Weatherwax. The Ann Weatherwax listed on the 1860 USC as living with Jacob F. (FAKE) Weatherwax is I believe his mother: Ann Fake/Weatherwax. I now believe Jacob F. Weatherwax's middle name was possibly "Fake" a common practice during this time period when the wife's line had no male descendants. Ann Fake married Jacob (nmn) Weatherwax son of Laurenz and Ann Millisuin/Weatherwax. I have no date of death for Jacob, or marriage data other than an IGI record. I do have birth/baptism records for this Jacob Weatherwax.
Their son Jacob F. Weatherwax married 1st Sarah Crapo, they had one child: Mary F. Weatherwax, I have recently found a record that indicates she may have later used her mothers name SARAH.
Jacob F. Weatherwax married 2nd Alma L. McCulloch/Fish. I suspect she may have been a widow (no proof). They had one son J. Ensign Weatherwax, he marr: L. Addie Whitney(DAR#98641) and they only had one son: Howard E. Weatherwax. this family was living in Greenfield,Ma in 1920, then moved back to NY state. Descendants live in Clinton Co.,NY today.(cant reveal names still living).
So I think this is a dead end for your Jacob P. Weatherwax I also seem to remember a Ann Weatherwax living with another family in Troy circa 1880, this could be Jacob Weatherwax' b:1790 wife. Not sure though.
