I am a Wolvey by marriage and Jane Proudlock's sister-in-law. My family researches have led me to think that the surname is nothing to do with the village of Wolvey, but is a transcription error by Victorian census takers. A John Wolvey married Mary Hewitt in Tonbridge Kent in 1858, from whom my husband's family seems to descend - this John Wolvey was born in Benington Hertfordshire and is recorded as Walby. Some of his children are variously recorded in census returns with the surnames Walby, Walvey or Wolbey. They were agricultural labourers and may not have been literate, so the Victorian officials who recorded their name may have spelled it as they heard it. John Wolvey had 8 children and his son Thomas had 7. They seem to have stayed around Tunbridge Wells in Kent where there are still family members.
