First, Ludwig did have a daughter named Sarah.She married Thomas Gault, not Rudolph Yontz.Rudolph Yontz married Sarah/Sabra Reid (most likely the son of Abbington Reid of Rowan County NC).My research has turned up several children but I did not find one named John.I would like to add him if there is any record of a child named John.

Orrick his attorney to demand from Jacob Weiss (?) or any other person, money due from estate of John Ebling in right of wife Sarah Gault, granddaughter of John Ebling.She is one of the children of Ludwig Ebling of NC, deceased.The eight children of Ludwig Ebling:Mary, wife of Henry Ebling; Cathy, wife of William Youse; Peky (?Becky), wife of George Hill; Sarah, wife of Thomas Gault; Betsy, wife of Lawrence Youse; George Ebling; Lazarus Ebling, 22 Jan 1825 (msc. B-2:137-8.
The correct name was Yontz/Yonts/Younce instead of Youse.
Further, there is a Berks County Deed, Vol. 29, pp. 300-303 that states that Lawrence and Willliam who married Ebeling Sisters were in Muhlenberg County KY in 1817:
Children of Ludwig Ebeling of Rowan County, NC, appoint Frances and David Williams to represent them as heirs of their grandfather John Ebeling of Berks County, PA.George Hartman of Rowan County, NC, attests that there are eight living and two deceased, both unmarried, children of Lugwig, "three mails and five fee-mails."Full release by the seven (apparently of age) heirs for receipt of their portion of the estate of John Ebeling totaling $807.84.Named as the eighth child wasSarah Ebeling.Signed by HenryEbling, George Ebeling, William Younce who m.
