I would not make too much of the meaning of Zufelt / Zufeld / Shofeld / etc. As I understand the origin of the name comes from Georg Zophel from Hasselbach, Germany. It seems his name when he settled in Rhieinbeck, NY was spelled Zufeld. In other publications I saw the same persons name spelled Schofeld, etc. In Canada direct decendants seem to have the spelling Zufelt.
My guess is that Zophel is the original from Germany and all others are intrepritations and derivitaves of the original. I have a major in German Language and I really do not know the meaning of Zophel.
The pronuciation of "Z" in German is "ts" sound like in cats. According to websites the Dutch often pronounce the "z" as and "s" sound which could explain why Z was sometimes written as "s" in the Dutch Reform Church records.
