A great point!
Adam and Eve Spoke Hebrew, but they were not Jewish.
Nor was Noah.
They held the seeds for those who would be Jewish.
As well, they were the Tzaddikim (righteous) of their generations.They had ruach Hakodesh, conversations with G-d, etc.They even knew where to offer sacrifices (on the place of the future temple).
But they were not Jewish.
