I have not been able to find Ellistown; but suspect it may have been one of the townships established in the 18th & 19th centuries around the coasts typically, eg Evanton.
They rended to be named after the Laird or his family.
Eventon is named for Evan Baillie Fraser, son of Alexander Fraser of Inchcoulter and Balcony. The names used could be First/Middle names as in this case; or could be Last Names.

I have checked through about 2,500 ELLIS and variants on the LDS FS site, most are in Aberdeenshire and surrounding counties. Very few are further afield; and none are in Ross & Cromarty. This was in the hope that one may reveal clues.

ELLIS(S) does not occur frequently in the 1881 Census map in Scotland.
LESLIE does occur in the greater Aberdeen shire area, the north-east tip of Ross & Cromart; and the Northern Isles.

I suggest that you take another look at the Baptism record on SP.
There are usually about twenty to a page, to see if those other ones offer clues, such as names of employers etc.
Also check all the margins carefully to see if there is a Parish Name different from Ellistown.
It can be helpful to try to locate any other townships etc mentioned on the page, as this starts to home in on the likely location of Ellistown.
I have checked in Parish Locator; but unfortunately no names approach Ellistown in any obvious variant.

It may be helpful if you included the full names and details you have for his daughter's Baptism, as the SP OPR Baptismal record seems to be the most solid information you have.
And if present in the record, the mother's name, although I am aware that these are often omitted.
Again, you have not given the likely Birth Year for Robert, eg did he desert shortly after joining, making his birth around 1774; or was it after substantial service, making his birth earlier than about 1774?
Are there others from the same township or likely to be close to Robert's Birth Place in that Muster roll, or other Leslies who may be relatives?
