Southdown records of family workers

Hello,
I'm trying to find if there are any records of family who work on Southdown Plantation in La.
Our great grandmother was posed to run the boarding house there in late 1800's are 1900's.

We went and visit the Plantation but no records there.
Hoping to find family that own it before 1936.
We are only wanting to learn more about our grandmother Leonide Bourgeois Esteve.
And if any of her family work there also.
