Saw your post in WWII message forum but decided to post what I found here so other Apodaca researchers may be able to help further.
Found only one Manuel Apodaca b. 1923 in TX in the 1930 census living in El Paso, El Paso Texas: Helesorio Apodaca age 32 first married at age 30 b. TX, father-MX, mother-MX wife Luz Apodaca age 33 first married at age 31 b. MX/MX/MX son Manuel Apodaca age 7 b. TX/TX/MX
This "Helesorio" is only found in the 1930 census so there are probably different spellings. Now when I "goggle" different spellings of Helesorio I was given the spelling Elizario. There is an Elizario Apodaca that is the right age range b. TX that is the son of a Guadalupe Apodaca and mother's name Guadalupe. In 1900 census Guadalupe Apodaca and family are living in Justice Precinct 4 (San Elizario), El Paso County TX. Wife Guadalupe listed she had 23 children with 12 living, 10 are in household with one grandchild. In 1880 census family listed as Appodaca and living in San Elizario, El Paso County, TX and Guadalupe has also in household his father listed as Delores age 60 with sisters Maria and Philipe. Doing a search I find a reference to a "Hilario" Apodaca but he is from New Mexico so I believe the Helesorio/Elizario b. 1894-1898 TX and living in El Paso County could be your Apodaca/Appodaca family. Just a guess on my part based on there not being a Manuel Apodaca b. abt 1923 that is missing from Ancestry's online index, which is possible.
You might want to post messages on the El Paso County, TX message board and the Fresno County CA message board(Caruthers is in Fresno County.)
There is an obit for a Manuel Munoz Apodaca b. in TX, died Nov 2003 in Fresno County which lists parents and I do find them in the 1930 TX census so this Manuel Apodaca is not the Manuel with father Helesorio.
The name "Giron" might be his mother's maiden name
