I think these Bryan(t)/Brian's were Catholic because of the origin in Maryland, and because William Bryant's son was buried in a Catholic cemetary in Kentucky.To convert to Catholicism was very rare in those days and brought on all kinds of persecution, so I assume he was brought up Catholic.I assumed that Anglo-Normans at this time period were not yet hibernicized enough to re-adopt the Catholic faith, which would have lessened their position under the English crown.
I have read that the spelling Bryan (that we use now) is most common in Kilkenny/Wexford, so you are probably right.
