If the guys you have met are skeptical regarding your identity, I guess you may try to convince them to take a DNA test, but first you may have to make sure which test would be the best for this purpose.

A long shot would be for some members of your family to take the Genographic Project DNA test and them post your results at FamilyTreeDNA (or take directly the FamilyTreeDNA test) and hope some unknow family member will do the same and the match could be established:

As for your name, if you want to write it "the Mexican way", first you write your given name, then your dad's first surname, then your mom's first surname, and if married, then "de" and your married surname. So, if Tom Cruise & Katie Holmes' daughter married Ted Elizondo, she would be:
Suri Cruise Holmes de Elizondo, no dashes.
