From Spain to Australia

Hello,
I am stuck in a bind. My Great Grandfather emigrated from Spain via Canada to Australia. All I know is the family name was Fernandez and that he had children in Spain and he emigrated after his wife passed away. He remarried to a woman with the surname Whittaker from Canada and they settled in Sydney, Australia. He was apparently a barber and wigmaker. After he passed away, the children all changed their surname by deed poll to their Mothers maiden name so that they could get jobs and marry. There was a lot of racism during the depression. Herbert William Whittaker(Fernandez) was my Grandfather. If anyone can help with names and dates it would be greatly appreciated.
