I have a couple of suggestions.Assuming that her birth name was Agnes Hatch and she was born in NY, you can get a copy of her birth certificate provided that it wasn't sealed when she was adopted.I'm not sure when they started sealing original birth certificates after adoptions but I believe that it was later than that.The NY vital records indexes are only available in a few places (I think the Rochester Central Library in Rochester is the only one in Western NY) but you could probably find a volunteer to look up the name.Since you have the birth date, it would only take about 5 minutes.
You can also try looking up Agnes Hatch in the soundex index for the 1920 census.That's not online but you can rent it on microfilm for a small fee from any of the many LDS (Mormon) Family History Centers.Anybody is welcome to use them.
Ellister was not a common name, the only two in the ancestry.com 1930 census index were in Oregon.There might be a spelling problem or an error in your information.
In the 1930 census for Freedom, Cattaraugus Co. NY the household of William and Nina Joslyn had four Hatch children listed as borders, they may have been orphans.One was an Agnes of the correct age, 11.The other three Hatch children don't match your information, however.They were Gladis (F,15), Donald (M,13), and Bendette (M,9).
My grandmother, who died long before I was born, was a Hatch but I doubt if she was any relation to Agnes.
