Believe me, the name will change from time to time no matter how you spell it now. Start with yourself, then your parents, then grandparents gathering names, dates and places.
Knobles tend to be of German or Swiss descend; Nobles of English. However, your German ancestor could have dropped the K once he got here or your English Knobles may have left the "K" on in memory of his ancestor the knight. I have a cousin on my Maltby side who said she quit counting the ways to spell Maltby (Malby, Maltbee, Maulby) when she hit 50! Can't imagine there are that many ways to spell Knoble/Noble but who knows! 150 years ago there really wasn't a set way to spell anyone's name.
