Chris,
I think you may have something here. The 1840 date was speculation based on Winfield's date of birth.I have a copy of a 1860 US Census taken on Jun 16, 1860, in Holland, VT.It lists the following:
Timothy Mosher, age 52, born in Canada (makes year of birth 1808), occupation, farmer.
Sarah, wife, age 47, born in Canada (b. 1813)
Levi, son, age 22, born in VT (b. 1838)
Lucy, daughter, age 18, born in VT (b. 1842)
Helen, daughter, age 16, born in VT (b.1844)
Martha, daughter, age 10, born in VT (b. 1850)
Delia, daughter, age 7, born in VT (b. 1853)
Edward, son, age 7, born in VT (b. 1853)
If only I could find a US Census for Holland, VT for 1870, it might link all of this together.
Thank you so much for your help.
Don
