Notice the 1880 census indicates that both of Henson G. Patterson's parents were born in SC.
After comparing the 1840 and 1850 census records of Gilmer Co., GA, I think Hiram and Elizabeth Cantrell Patterson were likely candidates to be the parents of Henson G. Patterson.In the 1840 census, there was one slot in Hiram Patterson's household for a male of Henson's age.By 1850, Henson was in his own household, having married in 1849; so, there is only circumstantial evidence that Hiram Patterson and Elizabeth Cantrell were Henson's parents.
As you pointed out, there was another Henson Patterson born in 1843 to John and Jenny Patterson. I think (no proof) it's possible that John Patterson was an older brother of Hiram Patterson.Both John and Hiram were on page 13 of the 1840 census, as follows:

I see that more than one Patterson researcher has Henson G. Patterson b. 1830 married to Vina A. CHANCEY.There WAS a Vina A. Chancey (d/o William C. Chancey), but she was only 2 years old in the 1860 census of Fannin Co., GA, and the Vina (presumably Plumley) who married Henson G. Patterson was 28 years old in 1860, as follows:
