There's this family in Ward 5, Buffalo, NY in the 1875 NY state census:

wife Anna age 35 b. Germany
son Frederick age 14 b. Erie Co, NY
dau Mary age 13 b. Erie Co, NY
son Jacob age 10 b. Erie Co, NY
son Valentine age 8 b. Erie Co, NY
dau Caroline age 10/12 b. Erie Co, NY
1870 census, Ward 6, Buffalo, Erie, NY:
KLEIN, Jacob age 39 b. Prussia, blacksmith
Anna age 31 b. Prussia
Elizabeth age 11 b. NY
Mathias F. age 10 b. NY
Mary age 7 b. NY
Jacob age 6 b. NY
Valentine age 3 b. NY
Phillip age 1 b. NY
Mathias F. is the right age to be the son listed as Frederick in 1875, but that doesn't tie in with your Fred having the middle initial C. or S.
I wonder if the oldest daughter, Elizabeth, was actually Anna Elizabeth?I found this IL death record:

There's another IL death record for a Peter N. M. KLEIN b. 1-Nov-1876 in Buffalo, NY, d. 5-May-1926 in Lockport, Will, IL.Spouse:Ella MOORE KLEIN.Father:John J. KLEIN, b. Germany.Mother:Anna E. SHELL, b. Germany.Occupation was Warden of IL prison.Buried in Chicago but cemetery name not given.
1900 census for Tallula, Menard, IL:
KLEIN, John J. b. Jan 1831 in Germany, married 42 yrs, both parents b. Germany, immigrated 1855.
wife Ann E. b. Jan 1839 in Germany, 10 children born, 8 children living, both parents b. Germany, immigrated 1856
son Peter W. b. May 1877 in NY
If these are the right people, it looks like most of the family moved from NY to IL.
