Hi, I can't really answer you question but my ggg grandfather, James Stark had a daughter, Sally and I noticed that she was on a Web Site as Sally Starck instead of Stark. I think that the family probably shortened the name when they came to America.
By the way, James of Granville Co.,N.C. had a son named John Stark that married Sarah Neal. I have more info on him if this rings a bell.
